Pakhus Moelleux - Domaine Ravier

The Moelleux "Pakhus" from Domaine Ravier is a rare treat that challenges Savoyard traditions. Crafted from late-harvested grapes, this sweet white wine strikes a masterly balance between residual sugar and mountain acidity. The nose reveals an exotic bouquet of mango, passion fruit, and roasted pineapple, underscored by notes of flower honey. On the palate, the texture is creamy and velvety, yet remains highly drinkable thanks to the mineral tension typical of the Myans terroirs. "Pakhus" is an invitation to indulgence, perfect for pairing with fruity desserts or bold cheeses. A wine of immediate pleasure, sun-drenched and refreshing.

Indulgence from the Peaks The Pakhus cuvée is the result of a quest for concentration. By allowing the grapes to ripen longer on the vine, the Ravier family achieves unique aromatic richness while preserving the estate's Alpine DNA.

Terroir and Winemaking:

  • Terroir: Plots located on the limestone scree of Mount Granier, benefiting from optimal sunlight to encourage over-ripening.

  • Harvest: Late harvest to concentrate the natural sugars and aromas of the grape.

  • Winemaking: Slow fermentation at low temperatures to extract full fruit complexity without heaviness. Fermentation is halted to maintain a perfect balance of residual sugar.

Tasting Notes:

  • Nose: Brilliant and rich, dominated by exotic fruits, candied apricot, and a hint of orange zest.

  • Palate: Generous volume and crunchy sweetness. The finish is clean, carried by a beautiful vivacity that prevents any cloying sensation and invites another sip.

Food Pairings: Surprising as an aperitif, it is superb with foie gras and fig jam, blue cheeses like Bleu de Termignon or Roquefort, or an apricot and almond tart.
