Le Noyer is a modern and refined interpretation of Jurassic Savagnin. Pierre-Vincent Girardin selected plots on blue marl and limestone soils to offer a crystalline expression of this grape variety, often associated with oxidation. Vinified and aged in Meursault like a great Côte d'Or white wine, Le Noyer is distinguished by its laser-like energy. Beneath a pale gold robe, it reveals a complex nose of intense citrus (lime, grapefruit), mountain flowers, and a smoky touch typical of Savagnin on limestone bedrock. On the palate, it is a wine of structure: the variety's power is channeled by sharp acidity and striking salinity. A "haute couture" Savagnin—vertical and vibrant—with surgical precision.

The "Ouillé" Style: Unlike Vins Jaunes, this cuvée is protected from air throughout its aging. The focus here is on fruit purity, varietal brilliance, and the mineral vibration of the soil, without any notes of walnut or curry.

Le Noyer Terroir: The vines are located on marl soils, the preferred terroir for Savagnin, which gives it that "grip" on the palate and the acidic backbone that stretches the wine.

Meursault Aging: The wine benefits from the estate's ultra-modern facilities and aging in large vessels (456L barrels). Working on the lees tames Savagnin's natural intensity, providing a silky texture and noble polish.
