The Dalmore 12 years benefits from a unique two-step maturation process. It first spends nine years in American white oak barrels that previously held Bourbon, before being divided: one part remains in Bourbon barrels, while the other finishes its maturation in 30-year-old Sherry Oloroso "Matusalem" casks from the famous Gonzalez Byass house.
