Volcanic Terroir: The canes grow on the ash of Mount Pelée. This well-draining, rich soil provides the rum with its unique tension and mineral signature.

Fermentation & Distillation: Long fermentation allows for great aromatic complexity before distillation in a traditional copper column.

Resting & Reduction: After distillation, the rum rests for several months in stainless steel tanks. It is reduced very slowly with mountain spring water to reach 45% ABV, preserving all the smoothness of the cane's essential oils.
