Château Simone Rosé is a legend, frequently cited as one of the world's finest rosés. From the Palette appellation, it is crafted with the same meticulous care as the estate's reds and whites. This gastronomic wine stands out for its complex blend (Grenache, Mourvèdre, Syrah, Cinsault) and prolonged aging in oak foudres. Moving beyond technological standards, it offers a light ruby color with salmon highlights and a noble nose of red berries, fine spices, and dried flowers. On the palate, it is fleshy, vinous, and masterfully fresh. Its aging potential is exceptional, developing notes of forest floor and candied fruits over the years. A rare, profound, and unforgettable rosé.

A Rosé of Body and Spirit Château Simone Rosé is not a "poolside" wine; it is a wine for the table and the cellar. Its unique winemaking gives it a structure and complexity more akin to great white wines for aging.

Terroir and Winemaking:

  • Terroir: Limestone scree on north-facing slopes, providing the natural acidity that serves as the wine's backbone.

  • Harvest and Vinification: Hand-harvested at full ripeness. Use of indigenous yeasts and gentle pressing.

  • Aging: Unlike almost all other rosés, it is aged in oak foudres for many months in the estate’s cool cellars. This time in wood provides its velvety texture and legendary stability.

Tasting Notes:

  • Nose: Highly complex, featuring redcurrant, raspberry, white pepper, and a very distinct mineral and saline core.

  • Palate: Powerful and balanced. It displays an elegant vinous character that coats the palate, supported by crystalline freshness.

Food Pairings: The ideal partner for bold Mediterranean flavors: bouillabaisse, grilled red mullet, spicy cuisine (saffron, curry), or white meats with Provencal herbs.
