Château Simone Red is one of Provence’s most prestigious red wines for aging. From the Palette appellation, it is crafted from a complex blend of Grenache (45%), Mourvèdre (30%), Syrah, Cinsault, and ancient local varieties. Thanks to its North-facing limestone terroir, this wine maintains rare freshness and aristocratic distinction. Aged for 18 to 24 months in small foudres and then in barrels, it develops deep aromas of black fruits, forest floor, truffle, and fine spices. On the palate, its tannic structure is powerful yet exceptionally velvety. A sovereign wine, capable of refining over several decades in the cellar to reveal its full complexity.

The Velvety Power of a Historic Grand Cru Château Simone Red is a timeless wine. Unlike the typically warm and powerful reds of the South, it emphasizes finesse, aromatic complexity, and a structure worthy of the finest Bordeaux or Rhône Valley wines.

Terroir and Winemaking:

  • Terroir: Limestone scree on the estate's north-facing slopes, benefiting from a cool microclimate that allows for slow and balanced ripening.

  • Varieties: A blend of rare richness. Beyond the classic Grenache, Mourvèdre, and Syrah, it includes Cinsault, Carignan, and Manosquin (an ancient local variety).

  • Aging: The wine ferments in small vats before spending 18 to 24 months in wood (foudres then barrels) within the estate's historic cellars. No fining or filtration is used.

Tasting Notes:

  • Nose: Highly elegant, opening with blackberry, black cherry, leather, cedar, and hints of garrigue.

  • Palate: Dense and profound. The tannic structure is tight yet incredibly fine. The finish is endless, marked by the saline freshness characteristic of Simone.

Food Pairings: It pairs best with characterful dishes: seven-hour leg of lamb, traditional Provencal stew (daube), game birds (partridge, woodcock), or aged beef cuts.
