The Elisa cuvée is Jonathan Pabiot's most ethereal expression. This biodynamic certified Pouilly-Fumé comes from vines planted on hard limestone soils known as "caillottes." Beneath a pale gold robe with crystalline highlights, it reveals a highly delicate nose: spring flowers (hawthorn, acacia), fresh citrus, and a hint of saline minerality. On the palate, the wine charms with its light texture and refreshing liveliness. Far from any varietal exuberance, "Elisa" prioritizes finesse and directness, offering a clean finish of great purity. A white wine of rare elegance, vinified with minimal sulfur to preserve the natural energy of the Tracy-sur-Loire terroir.

Biodynamic Philosophy: The use of horn manure (500) and silica (501) preparations helps boost photosynthesis and the plant's natural resistance, ensuring healthy, vibrant fruit.

"Natural" Winemaking: Gentle pneumatic pressing, fermentation with indigenous yeasts, and short aging on fine lees in stainless steel tanks. The goal is to neither add nor take away from the grape's original brilliance.
