Unlike the blended cuvées of the estate, Minéral relies solely on two carefully selected lieux-dits: Champ Bouton in Avize and Les Bionnes in Cramant.

These parcels share a rare geological profile. The layer of earth is very thin and quickly reveals the chalk, the true backbone of the wine.

This proximity to the parent rock promotes deep rooting of the vine, regular water supply, and a particularly precise expression of Chardonnay.

A viticulture respectful of life

At Pascal Agrapart, the soils are worked mechanically to preserve their biological activity.

The grapes are harvested exclusively by hand. Fermentations use indigenous yeasts when conditions allow. The wines are neither fined nor filtered to preserve their personality.

Agrapart Mineral and the strength of the terroir

The Agrapart Mineral is not built around a winemaking style but around a geological reading.

Here, Chardonnay expresses remarkable tension, enhanced by the thinness of the limestone soils. The aging, partly in old barrels and partly in tanks, adds more relief without marking the wine with woody notes. The long aging on lees then refines the texture while developing remarkable depth.

The Extra Brut dosage limited to 3 g/L allows the chalk to express itself without artifice.
